Hello! I’m Lily, the mover behind Growth & Greens. I’m a nutrition scientist and mom of three young kids. Growth & Greens is the product of 5+ years of research evaluating community nutrition, food insecurity, and food systems. During this time, I was searching for tangible ways to help improve food equity and nutrition status for at-risk populations. And then I found microgreens!
These little crops hit all the marks. Microgreens are categorized as a functional food, which means the health benefits they provide go beyond essential nutrients. Microgreens contain high levels of antioxidants and other health-promoting bioactive compounds, which helps your body prevent and manage chronic diseases. And more often then not, they contain much higher levels of nutrients than their mature counterpart.
They are also a tool to promote local food systems, and they can be extremely sustainable to grow. We use local soil (Full Circle), reusable trays, organic/non-GMO seeds, filtered water, and light… That’s it.
